3-4 cloves Garlic (chopped)
2tbsp Chai poh (chopped preserved white radish)
2 tbsp Oil
In a pan, heat 1tbsp of oil and fry chopped garlic, chai poh and chili paste till fragrant. Push this paste to the side of the pan.
Add another tbsp of oil to the pan and pan fry carrot cake till lightly browned.
Spread browned carrot cake evenly apart in pan. Add light soy sauce and half of the dark sweet sauce.
Beat eggs lightly and pour mixture over carrot cake. Let it set a little before stirring.
At this point, you can add the remaining sweet sauce.
At this point, taste. You might need a dash of salt if your light soy sauce has lower salt content.
Drizzle sesame oil and sprinkle pepper and chopped spring onions.
